I start by cooking my onions in olive oil, just until they start to brown.
Take the onions out and place your roast in, and brown on both sides. Season your roast with, pepper, salt, garlic and rosemary! I also take a knife and slice open 1/2 inch pockets in roast and push in several pieces of garlic.
Next place your roast in your crock pot on high heat, add the onions. Pour over the top Campbell"s Beefy Mushroom soup. (Do not add water.)
Cover and cook for 4-5 hours depending on your crock pot. When you can stick a fork through the meat, add potatoes, and carrots, and cook for another hour until tender. Serve on a platter or right from the crock pot. The roast makes its own gravy from the soup! Enjoy! And thats what's cooking on the farm!
