Meatball Soup with Garden Vegetables!

1 pound of ground beef
1 bell pepper, chopped
1 onion, chopped
4 potatoes, chopped
3-4 carrots, peeled and chopped
4 yellow squash, chopped
3 teaspoons black pepper
2 teaspoons salt
2 teaspoons of garlic salt
2 teaspoons parsley
​1 package of Lipton Beefy Onion Soup
5 cups of water
2 Tablespoons Olive Oil

​In a pot add the water and soup and bring to a boil. In another bowl mix together hamburger meat, 1/2 bell pepper, 1/2 onion, and 1/2 of the spices, make the mixture into balls. Now drop into the soup mixture the hamburger balls and potatoes, turn down to a simmer.
​In a skillet add the olive oil heat to medium heat and add the rest of vegetables and the rest of spices, cook until the vegetables have a little color on them, then add to the pot and continue to cook until meat and potatoes are done.
Serve with cracker or cornbread!

Peanut Butter Cake or Bar Cookies!

1/2 cup butter
1/2 cup Crisco
1 1/2 cup sugar
1/2 cup brown sugar
​3/4 cup of crunchy peanut butter
4 eggs
​1 teaspoon of vanilla
1/2 teaspoon of salt
1/2 teaspoon of soda
2 cups of flour
​1/2 cup  of oats

​In a bowl cream together  the first 7 ingredients, next mix the dry ingredients in and mix well. At this time you can either place in a 9 x 13 cake pan or you can use a sheet pan for bar cookies. Place in a 350 degree oven for about 25 minutes depending on your oven. The bar cookies are done when they are browned and the cake is done when a toothpick inserted comes out clean. Place on a cooling rack while you get the next step ready.

​Now in a mixing bowl add 2 cups of powdered sugar, 1 Tablespoon of cocoa, 1 Tablespoon of butter softened, 1/4 teaspoon of salt, 1 1/2 teaspoons of vanilla and 4-6 Tablespoons of milk. Turn on the mixer adding the milk a little at a time until your icing is smooth and can be easily spread.
When the cake/cookies are cooled spread the icing into a nice even layer.

​The last step: In a mixing bowl add 1 cup of powdered sugar, 1 Tablespoon of either creamy or crunchy peanut butter and 1-2 Tablespoons of milk. While mixing add one Tablespoon of milk first to see if it is the right consistency to dribble over cake/cookies with a fork, if not add more milk.
Dribble the peanut butter mixture over cake/cookies with a fork doing any pattern you want.

​Now if they are cookies cut into bars! Either way they are great and store well in a airtight container.

Snowball Cookies!!!!

2 Sticks of butter, softened
1/2 cup powdered sugar, plus extra for dusting
1 teaspoon of vanilla
2 cups of flour
1/2 cup of chopped pecans or almonds

In a bowl beat butter and sugar until creamy then add vanilla. Next add flour until all is combined then add your nuts.
Shape dough into balls about 1 inch in diameter. Place on a baking sheet lined with parchment paper. Bake at 350 degrees for about 10-13 minutes until bottom is lightly browned. Cool on baking sheet for 5 minutes transfer to cooling rack till completely cooled, then dust with powdered sugar. Keep in a covered container!!

Farm Toasted Crackers!!

Anytime on the farm when I fix chili or soup, I make toasted crackers with a different kinds of cheese......that is when I don't have cornbread! LOL!

On a sheet pan that has been lightly sprayed with pam lay out your saltine crackers.
Place a small piece of whatever kind of cheese you prefer.
Put into a 350 degree oven for about 10 minutes watching to make sure your crackers don't burn.
Serve hot with your soup or for a snack!
The grandkids love them!

White Chocolate & Pistachio Cookies!

 1 cup butter
11/2 cups of packed brown sugar
2 eggs
2 teaspoons of vanilla
3 cups of flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
1  12oz bag of white chocolate chips
1 cup of roughly chopped roasted and salted pistachios
1 1/2 cups of oats

In a large bowl, mix butter and brown sugar until fluffy. Now add eggs one at a time beating well after each egg. Next add vanilla. In another bowl mix together flour, baking soda, baking powder, and salt. Slowly add to butter mixture while mixing. Now add the white chocolate chips, oats, and pistachios.
Drop by tablespoon full onto a parchment paper lined baking sheet. Bake at 350 degrees for 10 minutes or until lightly browned. Let the cookies cool on pan for about 2 minutes then remove to wire racks to completely cool.

3 cups of sugar

½ cup Karo syrup

2 egg whites

1 teaspoon vanilla

½ cup water

1 cup chopped or whole Pecans

 

In a sauce pan over medium heat add sugar, syrup, and water. While stirring constantly bring mixture to softball stage on candy thermometer.

 

In a mixing bowl you already have prepared with the egg whites turn mixer on beating egg whites until stiff. When syrup mixture is ready at softball stage pour half of the mixture slowly into the egg whites.

 

Keep mixer on throughout recipe.

 

Next put the syrup mixture back on heat and continue stirring constantly until at hardball stage as indicated on candy thermometer. Slowly add the rest of syrup mixture into egg white mixture, now add the vanilla and continue to beat mixture for about 2-3 minutes until it begins to thicken.

 

When candy is ready pour into a well butter greased dish, now you can add your whole pecans on top or if you prefer add your chopped pecans to candy before you pour into dish.

 

Let candy set for about 5-10 minutes then cut and serve. Keep in refrigerator.

Caramel Cake!

This cake is so simple yet so yummy!
1 Box of a yellow cake mix (make according to directions)
When the cake is finished baking set aside and start on the caramel glaze.

Caramel Glaze
1 cup butter
1/2 cup brown sugar
1/4 cup heavy cream

In a sauce pan add the butter and brown sugar. Let this mixture cook and boil up for about 5 minutes stir the mixture the whole time.
Then remove from heat and add the cream be careful mixture will bubble up. Mix well.
Then punch holes into the yellow cake and pour caramel mixture over the entire top. Allow to sit for a few minutes before serving.

White Cake!

1 cup of milk
1 and 1/2 teaspoon of vanilla
1 cup of butter, softened
2 cups of sugar
3 cups of cake flour
1 Tablespoon of baking powder
5 egg whites

In a bowl stir together the milk and vanilla and sit aside.
In a large bowl mix together sugar and butter. In another bowl sift together flour and baking powder. Now add flour mixture a little at a time into butter mixture, alternating between the milk mixture and the flour. Beat at low speed after each addition. In another bowl beat the egg whites until they form stiff peaks, fold into your batter mixture very gently.
Pour batter into your desired prepared pans. Bake at 350 degrees for about 30 minutes or until a toothpick placed in the center comes out clean. Cool completely before icing.

Icing: 6 cups of powdered sugar, 1 teaspoon of vanilla, 2 Tablespoons of soft butter, 2 Tablespoons of milk, beat together well.

Iron Skillet Pancake!

                                            Iron Skillet Pancake

 

½ cup of flour

½ cup of buttermilk

½ teaspoon of salt

2 eggs

4 Tablespoons of butter

 

Take your iron skillet (or you can use a pie plate) place butter into skillet and put into a preheated oven of 425 degrees.

Next mix together the flour, buttermilk, salt, and eggs. The batter will have some lumps.

Now pull out your skillet and add the pancake mixture making sure it covers the entire bottom.

Bake for about 15 minutes, until golden brown and puffed around the edges. Remove your skillet from the oven, carefully remove pancake onto a platter for serving.

You can use strawberries and whipped cream as a dessert pancake, or Syrup and butter for a traditional pancake, or just a little powdered sugar.

This recipe allows you to be with your guest or family without having to spend your time flipping pancakes!
