
In a 2 qt. microwave-safe bowl combine, 3/4 cup of brown sugar, 2 teaspoons of instant coffee, 1/3 cup of butter, and 2 Tablespoons of corn syrup.
Microwave mixture on high for 2 minutes, stirring after each minute. Microwave on an additional 2 minutes continuing to stir after each minute. Take out and stir in 1 teaspoon of vanilla, and quickly poor over syrup mixture and mix until evenly spread.
Next transfer 1/2 of mixture into a microwave safe bowl and Microwave on high for 2 minutes, stirring after each minute. Then spread popcorn onto parchment paper to cool, Popcorn will become crisp as it cools. Repeat for second half.
