3 cups of sugar
½ cup Karo syrup
2 egg whites
1 teaspoon vanilla
½ cup water
1 cup chopped or whole Pecans
In a sauce pan over medium heat add sugar, syrup, and water. While stirring constantly bring mixture to softball stage on candy thermometer.
In a mixing bowl you already have prepared with the egg whites turn mixer on beating egg whites until stiff. When syrup mixture is ready at softball stage pour half of the mixture slowly into the egg whites.
Keep mixer on throughout recipe.
Next put the syrup mixture back on heat and continue stirring constantly until at hardball stage as indicated on candy thermometer. Slowly add the rest of syrup mixture into egg white mixture, now add the vanilla and continue to beat mixture for about 2-3 minutes until it begins to thicken.
When candy is ready pour into a well butter greased dish, now you can add your whole pecans on top or if you prefer add your chopped pecans to candy before you pour into dish.
Let candy set for about 5-10 minutes then cut and serve. Keep in refrigerator.
