6 yellow squash sliced 2 inches thick
6 carrots cubed
6 banana peppers chopped
1 large onion chopped
6 tomatoes chopped (cut outside skin off before chopping, just use inside.
6 potatoes peeled and cubed
1 cup half-n-half or heavy cream
3 Tablespoons of parsley
1 Tablespoon of salt
1 Tablespoon of pepper
1 teaspoon of rosemary
Using the broth that you cooked your chicken in add all the above ingredients. Cook on medium high until stew comes to a boil then turn down to a medium low simmer. When the potatoes are tender the stew is ready!
Tip* I have used a rotisserie chicken, then just added about 6 cups of vegetable or chicken broth. This works just as well.
