Next fold in 1 cup of crushed peppermint.
Using a small spoon, drop dough onto a parchment lined cookie sheet. Sprinkle one spoonful of crushed peppermint on top of each cookie.
Bake cookies at 350 degrees, until firm around the edges but still soft in the middle, about 10-12 minutes. Let cookies cool about 1 minute then remove from cookie sheet onto wire rack to continue cooling.
