Mini Cherry & Lemon Pies!

First spray your muffin pan, to prevent pies from sticking!
Next make the following pie crust:
Mix 2 cups of flour and 1 cup of Crisco together, Next add 1 cup of water and a pinch of salt. Mix until combined, turn out on to a floured surface needing until well combined.
Next take a small amount and press into each muffin place. Making sure to come up on the edges. You can pinch edges up if you want to make them more fancy, however I just do the rustic look! Most of the time people are to busy eating to notice!
The next step is to fill your pies. For the cherry I just use a can of cherry pie filling, spoon into pies, then on top I sprinkle a little sugar, cinnamon, and add a very small amount of butter.
For the Lemon Chess Pies: Mix together well, 3 eggs, 1/3 salt, 3Tablespoons of softened butter, 1/4 cup of lemon juice, 1 1/2 cups of sugar. Spoon mixture into pie crust. Bake at 375 for 40 minutes until crust are brown and lemon is set! Let pies cool for about 10 minutes then take out and place on rack to cool completely. (I use a spoon to get pies out, I find it works better.)

You can even make these during the holiday! Use any pie filling you wish, chocolate, pumpkin, and buttermilk just to name a few!

Salted Caramel Pretzel Bark!

Take a baking sheet and cover with parchment paper.
Next put a layer of pretzels on baking sheet.
In a saucepan melt two sticks of butter, next add 1 cup of brown sugar, mix well, allow mixture to become hot but not to a boil. When mixture starts to thicken remove from heat and pour over the pretzels. Use a spatula to spread evenly.
Next place the pretzel mixture into a 400 degree oven for 5 minutes.
When done remove from oven and evenly pour a 12 oz. bag of chocolate chips over entire mixture. As the chips begin to melt spread evenly over entire area. Let stand for 2 minutes.
Next take about a tablespoon of sea salt and sprinkle over the top. Refrigerate for 1 hour, then break into pieces and store in an airtight container.

You can also use unsalted pretzels and white chocolate.

Easy Pound Cake!

2 sticks of butter (room temperature)
1 1/2 cups of sugar
5 eggs (room temperature)
2 cups of flour
1/4 teaspoon of soda
1 Tablespoon warm water
8 drops of yellow food coloring
Mix together the butter and the sugar making sure to mix well.
Next add 1 egg at a time while continuing to mix.
Next in a small bowl mix the soda and warm water together, then add to mixture. Then add the flour one cup at a time, again making sure to mix well. Now add 8 drops of yellow food coloring. Mix. Place batter into a prepared loaf pan and place in a preheated 300 degree oven for 1 hour and 10 minutes or until done.

If you prefer you can omit the yellow food coloring.
You can also take 3 cups of powdered sugar, 1 Tablespoon of butter, 1 teaspoon of vanilla, and a small amount of milk, mix together and drizzle on top of loaf.
This cake is also great for Strawberry Short Cake!
