Lemon Drop CupCakes!!

Beat together well: 4 eggs, 3/4 cup of oil, 3/4 cup of water.
Combine mixture with 1 yellow cake mix, and 1 package of lemon pudding mix.

Put cupcake papers in your pan, pouring mixture about 1/2 inch before top.
Bake at 350 degrees, until toothpick in the center comes out clean.

Place cupcakes on wire racks. (place a cookie sheet under wire racks to prevent mess when pouring icing on.)
Take a toothpick or fork and punch holes into the tops of each cupcake.

Icing: 4 cups of powder sugar, 6-7 Tablespoons of lemon juice, Mix well.
Pour icing over each cupcake, repeat until all of icing is used.
Allow cupcakes to sit until icing has hardened.

Easy Hashbrown Potato Soup!

In a large pot add 1/3 cup of olive oil and 1 pound of sausage, begin browning your sausage, next add a cut up onion.

Next add 3-4 cubed carrots, and one bag of frozen hashbrowns.
Add 1/3 cup of flour, 2 teaspoons of garlic pepper, 2 teaspoons of salt, mixing well to coat everything in the flour.

Next add one can cream of onion soup, one can of cream of celery or mushroom. Add 3 cups chicken broth, 2 cups milk and 2 cups half and half and stir together.
Cook on med high heat until carrots are soft. Then serve!!!

This soup thickens up as it cooks like a chowder! It's so good!! You could also use cubed ham instead of sausage if you like, also any other spices you prefer!

Simple Fried Potatoes & Hominy!!

Cut up potatoes, onions, and open one can of Hominy. (drained)
Heat your skillet with olive oil, when hot place potatoes, onions and hominy in skillet.
Spice with salt, pepper, garlic, parsley. Carefully keep turning as potatoes and Hominy begin to brown, and become soft.

Puff Pastry Sticky Buns!

Thaw your puff pastry. Lay your first sheet out and brush on melted butter. Next in a bowl mix 1/2 cup of brown sugar and 4 tablespoons of cinnamon. Add cinnamon sugar mixture to the top of your pastry dough.

Roll the pastry dough up and cut to fit muffin tin. Repeat this process with your second sheet of pastry dough.

In a bowl cream together 1 cup of softned butter and 1/2 cup of chopped pecans. ( you can also use walnuts or almonds). Next spray muffin tin with Pam. Place about 1 tablespoon mixture of butter into each tin, next take each roll and place on top of butter, very gently pressing down.

Bake on 400 degrees for 30-35 minutes, until golden brown. Take out and allow Sticky buns to rest for 5 minutes.

Turn out of pan. Place in an air tight container when storing! I find these are best right out of the oven!!! Enjoy! And that's what's cooking on the farm!
