Megan's Nano Muffins!

Mix 1 1/2 cups of sugar, 1/2 cup of crisco, 2 eggs, and 3 ripe bananas together.
Next add 1 teaspoon of baking soda, 2 cups of flour, and 1 teaspoon of vanilla.

Place batter into well greased muffin pan.
Sprinkle oatmeal along the top of each muffin.

Next sprinkle banana chips on the top of each muffin.
You can also add dried cranberries, and granola if you wish! Bake at 350 degrees until toothpick inserted comes out clean.

You can cool muffins in pan, or turn out onto parchment paper to cool! Enjoy! And that's what's cooking on the farm!

Hamburger Puff Pastry!

This receipe is quick and simple, yet yummy!
Thaw out two sheets of Puff Pastry dough.
Ground some hamburger meat in a skillet. Add one onion, and cube up several potatoes.
Salt and pepper, along with parsley, garlic and a few splashes of hot sauce. Next mix in one small can of cream of mushroom soup. Then add any kind of shredded cheese you prefer.

Place one Puff Pastry sheet on a cookie sheet. Fill with hamburger mixture. Place the other Pastry on top. you can either put a slit in the center or to the side to allow venting. Go along the edges of Puff Pastry with fork to secure together.  Brush top of Pastry sheet with an egg wash.

Bake on 400 degrees until golden brown! Enjoy!

Mammaw's Red Velvet Cake!!

In a bowl make a paste of 4 Tablespoons of cocoa, 2 Tablespoons of hot coffee, and 1tsp. of red food coloring.(you can keep adding more food coloring to get the desired color of red you prefer.)

In another bowl, cream together 1/2 cup of shortening, and 1 1/2 cups of sugar. Next add 1 egg, 1 cup of buttermilk. Next sift together, 2 cups of flour, 1 tsp. of soda, and 3/4 tsp. of salt.  Mix the dry ingedients to your wet mixing well but don't over beat. Add 1 tsp. of vanilla, Mix well. Next fold in the cocoa and food coloring mixture. Place in pans for a 2 layer cake. Bake at 350 degrees, until toothpick pushed in center, comes out clean. Sit on racks to cool.

Now make the icing: Place the room temperature 1 & 1/2 pkg. of cream cheese in a bowl, and 1 1/2 sticks of unsalted butter, mix well. Next sift 1 bag of  powdered sugar in a bowl along with a 1/4 of tsp. of salt. Add powdered sugar mixture to the cream cheese and butter mixture and mix well. Last add 2 teaspoons of vanilla.

Place first layer of cake on a plate. Place a large spoonful of icing on top, spreading over the entire cake, Place the next layer, repeat going around sides of cake until covered in icing!!!
