White Cake!

1 cup of milk
1 and 1/2 teaspoon of vanilla
1 cup of butter, softened
2 cups of sugar
3 cups of cake flour
1 Tablespoon of baking powder
5 egg whites

In a bowl stir together the milk and vanilla and sit aside.
In a large bowl mix together sugar and butter. In another bowl sift together flour and baking powder. Now add flour mixture a little at a time into butter mixture, alternating between the milk mixture and the flour. Beat at low speed after each addition. In another bowl beat the egg whites until they form stiff peaks, fold into your batter mixture very gently.
Pour batter into your desired prepared pans. Bake at 350 degrees for about 30 minutes or until a toothpick placed in the center comes out clean. Cool completely before icing.

Icing: 6 cups of powdered sugar, 1 teaspoon of vanilla, 2 Tablespoons of soft butter, 2 Tablespoons of milk, beat together well.

Iron Skillet Pancake!

½ cup of flour

½ cup of buttermilk

½ teaspoon of salt

2 eggs

4 Tablespoons of butter

 

Take your iron skillet (or you can use a pie plate) place butter into skillet and put into a preheated oven of 425 degrees.

Next mix together the flour, buttermilk, salt, and eggs. The batter will have some lumps.

Now pull out your skillet and add the pancake mixture making sure it covers the entire bottom.

Bake for about 15 minutes, until golden brown and puffed around the edges. Remove your skillet from the oven, carefully remove pancake onto a platter for serving.

You can use strawberries and whipped cream as a dessert pancake, or Syrup and butter for a traditional pancake, or just a little powdered sugar.

This recipe allows you to be with your guest or family without having to spend your time flipping pancakes!

Bacon & Potato Farm Strata!

1 package of Bacon, cooked and chopped into bite size pieces

10 potatoes chopped and fried until golden brown

4 scallions chopped

2 cups grated cheese (your choice)

1 can diced tomatoes, drained

3 eggs, beaten

1 cup of milk

½ cup half and half

3 teaspoons of black pepper

3 teaspoons of salt

½ teaspoons of paprika

1 teaspoon of parsley

1 teaspoon of garlic salt

 

In a bowl mix together the potatoes, bacon, tomatoes, scallions, and all the spices. In a separate bowl add milk, half and half and the eggs, then mix well.

In a prepared casserole dish first layer add half your potato mixture and half the cheese, next the other half of potato mixture and the rest of cheese.

Now pour the milk mixture over the entire casserole.

Bake at 375 degrees for about 30 minutes until golden brown.

 

Tip: When making this strata you can substitute the tomatoes for a Can of Rotel, serve with flour tortillas for breakfast tacos.

You can also substitute the bacon for sausage or ham.
