Alivia's Chocolate Shortbread Cookies!

Butter and flour 2 (8 inch) square baking pans.
Next Place 2 cups of flour, 2/3 cup of sugar, and 1/2 teaspoon of salt in a food processer, and pulse once to mix. Then add 2 sticks of butter to mix. (cut butter into small pieces.)
Pulse until mixture resembles peas.
Press shortbread mixture into prepared pans and bake at 350 degrees, until golden brown around edges, 20 minutes. Let cool completely when removed from oven on wire racks.

Next in a heavy bottom pan, combine 2 cans of Eagle Brand Milk, and 2 Tablespoons of butter, bring to a boil on medium heat, stirring constantly. When mixture starts to boil continue to stir until it becomes a golden brown.
When done, pour the caramel mixture over the shortbread and allow to come to room temperature.

Next take a microwave safe bowl and melt 1 12oz. package of chocolate chips.
Pour onto top and spread. Allow to set for 10 minutes, then place in refridgerator for another 10 minutes, then take out and serve.

These are so good, they taste like a twix bar!!! Yum!

Peach Cinnamon Rolls!

Dough: Heat 2 cups of milk, and 1/2 cup of sugar until warm (do not boil) Take off heat and set aside.
When milk mixture is luke warm sprinkle in yeast package. When the yeast starts to foam, add to 4 cups of flour in a large bowl. Stir flour mixture until combined, place a dishtowel over bowl and put in a warm place for 1 hour.

After one hour, add 1/2 cup of flour, 1/2 teaspoon of Baking Soda, 1/2 teaspoon of Baking Powder, and 2 teaspoons of salt.
Mix together and set aside.

Next flour your surface and turn your dough out and roll dough out to desired shape.
Next brush butter onto the entire surface of dough.
In a bowl combine 2 jars of Peach Jam, 1 Tablespoon of brown sugar, 1 Tablespoon of Cinnamon. Spread over the dough.

Next roll dough and cut out rolls and place on a 3x13 sheet pan, ungreased.
Cover and allow to rise for 30 minutes.
Then place foil over top and Bake at 375 degrees for 25 minutes, then remove foil and bake for another 15 minutes.

Once Rolls are done, you can serve as they are or make icing to drizzle on top.
Icing: 3 cups of powdered sugar, 1/2 teaspoon of vanilla, 4-6 Tablespoons of milk. Slowly add milk to the powdered sugar until you get the desired consistency. Mix well.
Take a spoon or fork and drizzle icing over rolls.

Chocolate & Orange Cups!

Take 1 12 oz. pkg. of Nestle's chocolate chips and place in your food processor or blender.
Pulse your chocolate chips until almost fine.
Next add 4 eggs, 21/2 teaspoons of vanilla, 1/4 teaspoons of salt, and 1 Tablespoon of orange zest.
Pulse together until mixture is mixed well. Next take 8 oz. of strong and very hot coffee (I use decaf, but you can use regular), Start pulsing mixture and in a steady pour add coffee mixing until smooth.

Next pour mixture about half way up into cup, you can use whatever you wish!
Place on a cookie sheet and put into refridgerator for atleast 3-4 hours or until mixture is firm.

Next add whipped cream on top, you can sprinkle with chocolate shavings!
So good and so easy!
For an adult dessert you can add, 4 Tablespoons of Coconut Rum! It's so good!

Simple Beef Stew!

Take a roast and cube up the entire thing and place in a large stew pan.
Add 2 Tablespoons of oil
1 Tablespoon of salt
1 Tablespoon of pepper
Cook on medium heat, searing the meat.
Next add 1/2 cup of flour mixing with meat.
Next add just enough water to cover meat.
Next add lipton onion soup mix and 1 can of Campbells beefy mushroom and mix.
Let simmer for 1 hour.

Then add carrots, and potatoes.
Cut up and cube. Place in pot with meat! Cook until meat is tender and vegtables!

Blackeyed Peas & Bacon Cabbage!

Wash your peas and place in a pot, place enough water in the pot to cover the peas.
Add a few slices of salt pork
A few chunks of ham
1/2 chopped onion
2 tablespoons of parsley
1 tablespoon of salt
1 tablespoon of pepper
1 teaspoon of cumin
1 tablespoon of diced garlic
2 Bay leaves
Mix well, cook on medium heat for 1-2 hours until peas are tender.

Cook 6 slices of bacon and set aside.
Next add to the bacon grease, 1 head of chopped cabbage, 1/2 onion chopped, 1 tablespoon of diced garlic, 2 teaspoons of salt and 2 teaspoons of pepper. Mix well and add one stick of butter to top.
Place lid on and steam on low heat for 15 minutes.

Crumble the bacon on top, and mix well.

And yes I did make sweet cornbread as well!
